217 Around the Périgord chicken SOME KEY FIGURES With over 5 million chickens produced (85% yellow and 15% white), the Dordogne produces 20% of the chickens reared in Aquitaine and ranks 2nd after the Landes. 247 rearing sites listed under the Périgord PGI Production area: the whole of the Dordogne and part of the bordering departments A sector organised around 5 hatcheries, 6 feed companies and 2 slaughterhouses, all members of the Management and Defence Organisation of the Périgord PGI. In 2016, Périgord poultry finally obtained European recognition, which allows Périgord Chicken, Périgord Capon and Périgord Poularde to make it inimitable: the Périgord Protected Geographical Indication! There are only 2 others, for poultry from Gascony and the Landes. The Périgord chicken is reared in the open air for a minimum of 81 days. It is recognizable by its fleshy appearance and its thin skin, of uniform colour (yellow or white), which covers sufficient but not excessive subcutaneous fat.
