208 Périgord Walnuts The walnut is to the Périgord what the olive tree is to Provence: this trees provide shade along the hillsides and fi ll the valleys. The walnut is part of the history of the Périgord and is still a well-established part of the cultural and culinary heritage of the region. This heritage and the expertise associated with this land of plenty, and which make it so characteristic, are at the source of this authentic product and at the root of the AOP Noix du Périgord. AOP, GUARANTEEING ORIGIN AND QUALITY The Périgord walnut has enjoyed an AOC since 2001; it obtained similar recognition at a European level in 2004. Its AOC at the national level, like its AOP at the European level, guarantee the high quality of this product. They mean that the authorised rate of imperfections is very low, and are a symbolic protection of the identity of the Périgord area. Périgord walnuts benefit greatly from their AOP; the age-old expertise of their farmers make this product a local gem with avours and virtues still intact after all these years. THE VARIOUS VARIETIES: The Perigord walnut includes four varieties: The rustic walnut, Corne, with a sweet, subtle taste. The traditional walnut, Marbot, is typically enjoyed fresh, just after harvesting. Its esh is white and crunchy. The typical Grandjean walnut has the strongest character of the four. Its avour is enhanced by a touch of bitterness. The best-loved walnut of the Périgord, Franquette, is enjoyed by all for its nutty avour like that of the hazelnut.
